This one?

  • 2 tablespoons salt

    2 teaspoons brown sugar

    2 teaspoons garlic powder

    2 teaspoons onion powder

    2 teaspoons ground allspice

    1 teaspoon crushed dried hot pepper

    1 teaspoon dried chives

    1 teaspoon paprika

    1 teaspoon ground black pepper

    1/2 teaspoon ground cloves

    1 teaspoon ground nutmeg

    1 teaspoon ground ginger

    1/2 teaspoon dried thyme

    1/2 teaspoon ground cinnamon

    1. place all ingredients together and mix well.

    2. coat meat with mixture and rub well into meat.

    3. leave it covered for at least 3 hours, better if you can leave over night.

    4. cook meat as desired. the meat will look burnt when it cooks so you gotta keep your eye on your fat drip.

    2 tablespoons water

    3 tablespoons dark rum boil these together for about 3 minutes

    1/2 cup malt vinegar

    3 tablespoons soy sauce

    2 tablespoons vegetable oil

    1 cup ketchup

    2 habanero chiles with seeds, chopped important to leave the seeds

    10 green onions, chopped

    4 garlic cloves, peeled, chopped

    2 tablespoons dried thyme

    2 teaspoons dark brown sugar

    2 teaspoons salt

    2 teaspoons ground nutmeg

    4 teaspoons ground allspice

    4 teaspoons ground ginger

    4 teaspoons ground cinnamon

    2 teaspoons ground black pepper

    mix these with the rum and water into a smooth paste

    let sit covered over night in the fridge

    dip the meat in lime juice for one minute then dry the meat then rub on three pounds of chicken, pork, goat, lamb or whatever the next day and let sit over night.

    I've done the second one at least once a year since you first posted it...everyone raves about how good the wings are.

    Believe it or not...I emailed myself that second recipe so I'd have it December 2010.

  • The wet rub is gold. That little diner makes bank like you wouldn't believe on pretty much that recipe.

    I was east side yesterday, my son called me up and asked me to bring some jerk chicken back for him. I called ahead for take out, got there at a little before 1500 and there was a line of five people ahead of me.
